The first quantification of food-derived Hyp-Gly in human plasma, confirming the peptide identified by Shigemura is measurable and reproducible. The Hyp-Gly to Pro-Hyp ratio ranged 0.063-0.221 here — notably narrower than the 0.00-5.04 range reported in the identification study, so between-study variation is unresolved.
