Chondroitin sulphate distribution in broiler chicken carcasses

A whole 1.66 kg broiler carcass yields roughly 0.63 g chondroitin sulphate uronic acid, about 1.9 g as chondroitin sulphate. Keel cartilage — the part usually named as the good source — supplied surprisingly little, under 10% of the total, with most distributed through the limb bones and joints. Gives the arithmetic for how much chondroitin a whole bird can contribute against an 800-1200 mg/day trial dose.
