Sulforaphane yield depends on stomach chemistry as well as on the food: adding myrosinase to the preparation raises conversion, and altering gastric acid with a proton pump inhibitor changes the amount absorbed.

Healthy adults given glucoraphanin-rich broccoli sprout and seed extracts with active myrosinase, with and without a proton pump inhibitor
Intervention
Broccoli sprout/seed extract with active myrosinase
Comparator
The same extract during proton-pump-inhibitor treatment
Limitations
Pilot study, small, healthy volunteers, no joint endpoint. Several authors have commercial interests in broccoli-sprout preparations.
