The broth fraction containing both hyaluronan and chondroitin sulfate maximally inhibited osteoclast differentiation and downregulated its marker genes; both whole broth and that fraction raised bone mineral density and bone volume/tissue volume on micro-CT versus ovariectomized controls. The first study to identify specific glycosaminoglycans in bone stock as the active constituents.

- Ovariectomized rat osteoporosis model, plus RAW264 mouse macrophage osteoclast-differentiation assays
- Intervention
- Whole chicken-vegetable bone broth, or the ion-exchange fraction containing hyaluronan and chondroitin sulfate
- Comparator
- Ovariectomized controls and sham-operated animals
- Limitations
- Rat model with a bone rather than cartilage endpoint. The composition figures are for a purified 48 mg fraction, so the study gives no concentration of hyaluronan or chondroitin per serving of the original broth, and no molecular weights.
